1.Hidden Production Area for Top Notch Seaweed!
Nishimikawa in Aichi prefecture is one of Japan’s most famous production areas for rich seaweed. The seaweed from Nishimikawa is frequently used for high grade gift products.

2.Uses the First Crop Only
The harvest season is from late November to early April.
During the season, the seaweed is repeatedly harvested over several sessions.
Over time, as the seaweed is harvested, it suffers a decline in its richness and taste.
For that reason, the product only contains the first crop of the season, which tastes the best.

3.Carefully Roasted by Professionals
Tateishi Nori Ten, the long established shop that has been running for three generations, has carefully roasted each sheet of the fresh seaweed for our customers in Hawaii. The seaweed’s special crispy texture is completely different compared to other ordinary seaweed.
We recommend to use it for such dishes as rice balls and hand rolled sushi.

The Super Healthy Food Umeboshi (pickled plum)
Umeboshi plums are nicknamed‘Edible Health.’
This umeboshi is the ‘real umeboshi.’
The owner of the plum tree, Hisashi Murayama inherited his plum trees (60 to 70 years old) from the previous generation and he carefully preserves them.

The annual harvest season is from mid-June to early July.
The owner picks each plum from the tree together with his wife and this hand picking process is truly tough work.

Since plums easily lose their freshness due to their strong transpiration quality, they need to be quickly processed and sold shortly after each harvest.

The freshness and deliciousness of the Murayama agricultural farm plums is their selling point.
(Additive-free and no chemical seasoning used, naturally colored with Japanese basil and produced through a health oriented process)
These carefully cultivated pesticide-free plums have such an impactful sourness that it will awake every cell in the body.

Double Brewing Process

Moromi Taru (barrel) used in the Yamaroku soy sauce’s brewing process is made with the Japanese large cedar tree for over 100 years.
There are only a few factories that use the barrel soy sauce brewing process in Japan.
The secret behind the tasty soy sauce is the natural bacteria living inside the barrels.
Tsurusho goes through a special double brewing process to create its supreme taste.

In the process, already once brewed raw soy sauce is poured back into the barrel again, the ingredients are added (except salt) and it is re-brewed for about two years.
As the soy sauce is carefully produced with twice the amount of ingredients and time, it has an exquisite richness, aroma and mellowness.

First class, delicious and safe sushi vinegar from Iio Jozo Vinegar Brewery, the long established vinegar shop in Miyazu, Kyoto (since 1893.)

The vinegar’s main ingredient, rice, is exclusively grown by the shop in a chemical free environment.

The vinegar is produced using a traditional process that takes 120 days.

By adding the vinegar to fresh rice, you can easily make excellent vinegared sushi rice that is said to be even more delicious than that from a sushi shop.

Since it uses honey and crude sugar for sweetness, it has a strong rich taste.

It produces savory, mild, vinegared sushi rice that also retains its sourness until the next day.

Additionally, thanks to the honey in the vinegar, the rice becomes extra moist.

It’s also perfect for making pickled food.
